Easy Nasi Goreng (Malaysian Fried Rice)



Ingredients

Basumati Rice -1 cup
Garlic - 2
Chicken - Minced- 3/4 cup
Dried Prawns powder -  2tsp
Pepper Powder -1tbsp
Green Bell Pepper -1/4 cup
Yellow Bell Pepper -1/4 cup
Red Bell Pepper -1/4 cup
Orange Bell Pepper -1/4 cup
Carrot Chopped -1/4 cup
Green Beans -1/4 cup
Tomato -1/4 cup
Soya Sauce -3 tbsp.
Oyster Sauce - 2 tbsp.
Chilly Sauce - 3tbsp/as Required
Green Chilly sauce - 2 tbsp.
Spring Onion -2 Springs
Salt -as required
Refined Oil -as Required



Preparation:

Cook rice in 2 cups of water, drain it and keep it aside. Heat oil in a wide pan and sauté garlic, before the garlic turns brown add minced chicken and cook till it's done. To this add dried Prawn powder and mix it well with chicken for 5 minutes. Next add all vegetable's except spring onion and sauté it for 5 - 10 minutes, then add all sauce one by one and mix well till the sauce thickens. To this add cooked rice and pepper powder and mix well. Last sprinkle the spring onion on top of the Fried Rice before serving.
  • Optional you can choose Prawns/Beef/Pork/vegetables instead of Chicken
  •  Instead of chicken veggies can try with Paneer/Soya chunks/Mushroom.

Orange Chicken


Ingredients
  1. Chicken boneless-1kg
  2. Green onion-2(chopped)
  3. Orange juice-11/2 cup
  4. Brown sugar-1/4th cup
  5. Soy sauce-2tbsp
  6. Garlic paste- 1tbsp
  7. Ginger paste-1/2tsp
  8. Cornstarch-2tbsp (dissolve in little water)
  9. Flour(maida)-1cup
  10. Egg-2
  11. Cornstarch-1cup
How to prepare?
Cut the chicken into small cubes. Next prepare the sauce- mixing all the ingredients from 3-7 & keep it aside. Coat the chicken first in flour,then egg, lastly cornstarch (9-11) & fry it in oil till it turns light brown colour. Wipe oil from chicken. Pour the sauce mixture to a wok & bring it to boil then add cornstarch(8) to thicken the sauce. When it becomes thicken add fried chicken & green onion,now turn off the flame after 5mins.

Chicken Cutlet

Ingredients
  1. Chicken -1/2 kg(boneless)
  2. Ginger - 2 big pieces
  3. Green chillies - 5 nos
  4. Bread crumbs -1/2 kg
    Options
  5. Masala - 4 tbsp
  6. Egg - 3 nos
  7. Potato -5 nos
  8. Coriander leaves -as reqd
  9. Chilly powder - 2 tbsp
  10. Pepper powder - 2tbsp
  11. Coriander leaves -as reqd
  12. Onion -2
  13. Curry leaves -2 sprig
  14. Salt -as reqd
  15. Oil -as reqd
How to prepare ?

Cook the potatos in cooker and mash it with hand or grinder (don't be too pulpy) . Next cook the chicken pieces (drain water) & chop it in grinder (not too pulpy) . Heat oil in a pan and put curry leaves, ginger, onion, green chillies & saute well till it turns soft . Then add chilly powder ,pepper powder saute well till it turns dark brown colour to this gravy add masala, coriander leaves & turn off flame . Mix all the mashed potatoes,chopped chicken & the gravy with salt . Mold the mixture to the desired shape . Next dip it in beatened egg white & coat it with bread crumbs . Lastly fry it in oil .

Chicken Fry/ Barbecue


Ingredients
  1. Chicken drum stick- 5 nos
  2. Chilly powder-1tbsp
  3. Coriander powder-1/2 tsp
  4. Chicken masala-1tbsp
  5. Garlic paste-1tbsp
  6. Ginger paste-1tbsp
  7. Black pepper-1tbsp
  8. Salt -as reqd
  9. Oil-as reqd
  10. Barbecue sauce( for barbecue)-2 tbsp
  11. Tomato sauce(for fry)-2 tbsp
  12. Lime juice-as reqd
How to prepare chicken Fry/Barbecue?
  • Clean the chicken and keep aside.Mix all the ingredients from 2 to 8 with oil and make it in paste form. In case of fry add tomato sauce along with the paste & marinate the chicken for 1hr. Then fry in oil till it turns brown colour.Last sprinkle it with lime juice .
  • In case of barbecue keep it in 450 degree for 1hr. BBQ Sauce should be added when 3/4th of its one side is cooked then repeat it for the other side same procedure. Then sprinkle it with lime juice. Here is your chicken decorated with curry leaves, onions, grapes and orange.
