Paalaada (Flat Rice cake)
  1. Appam Rice - 1 cup
  2. Coconut Milk -1/2 cup
  3. Egg - 1
  4. Cooked Rice - 1 tsp
  5. Salt - as required
  6. Sugar - if needed
  7. Cardamom - If needed
Preparation

Soak the rice for overnight. Grind all the ingredients appam rice,Coconut milk, egg, cooked rice and salt (you can add sugar and cardamon if needed depends on taste) in grinder, grind until it gets smooth,whip or when froth comes on top of the mixture. Place the pan in medium flame, when the pan is hot pour the batter and rotate it as thin as you can and allow it to cook. Take out and serve it hot with chicken curry, beef fry and mutton.



Chemeen chamanthi

Dry Prawns - 1/2 cup
Onion -8-10
Chilly Powder - 2 tbsp
Curry Leaves - 2 springs
Vallan pulli - 4-6 pieces
Coconut -1 cup
Salt - as Required

Method

In a pan saute the dry prawns until it's raw smell goes and add chilly powder just before the prawns are taken out from stove. Take another Pan, saute the coconut,shallots,curry leaves,vallan pulli, salt and saute it for 5-6 minutes. Last chop all those ingredients and it's ready to serve with rice, Chapathi, Appam.

Easy Nasi Goreng (Malaysian Fried Rice)



Ingredients

Basumati Rice -1 cup
Garlic - 2
Chicken - Minced- 3/4 cup
Dried Prawns powder -  2tsp
Pepper Powder -1tbsp
Green Bell Pepper -1/4 cup
Yellow Bell Pepper -1/4 cup
Red Bell Pepper -1/4 cup
Orange Bell Pepper -1/4 cup
Carrot Chopped -1/4 cup
Green Beans -1/4 cup
Tomato -1/4 cup
Soya Sauce -3 tbsp.
Oyster Sauce - 2 tbsp.
Chilly Sauce - 3tbsp/as Required
Green Chilly sauce - 2 tbsp.
Spring Onion -2 Springs
Salt -as required
Refined Oil -as Required



Preparation:

Cook rice in 2 cups of water, drain it and keep it aside. Heat oil in a wide pan and sauté garlic, before the garlic turns brown add minced chicken and cook till it's done. To this add dried Prawn powder and mix it well with chicken for 5 minutes. Next add all vegetable's except spring onion and sauté it for 5 - 10 minutes, then add all sauce one by one and mix well till the sauce thickens. To this add cooked rice and pepper powder and mix well. Last sprinkle the spring onion on top of the Fried Rice before serving.
  • Optional you can choose Prawns/Beef/Pork/vegetables instead of Chicken
  •  Instead of chicken veggies can try with Paneer/Soya chunks/Mushroom.
